This unique prosciutto is aged for 10-12 months then rubbed with freshly ground fennel and red chili pepper. The spice rub adds a bright, herbal note that compliments the richness of the pork perfectly. Pair with nutty, sharp, and/or lactic cheeses, full-bodied beers and ciders, and fresh fruit.
