Cinta Iowa

This Tuscan breed has been bred for charcuterie for centuries and has the creamiest, dreamiest fat we've ever eaten. These hogs descent from a herd of heritage breed Cinta Senese brought over from Tuscany and are the only herd in the United States. The project is a partnership between Herb Eckhouse (co-founder of La Quercia) and Ken Kehrli, a prominent heritage breed expert in Northeast Iowa working to develop this special stock into a unique breed that will thrive in Iowa. The rich diet and free range lifestyle imparts a uniquely rich and meaty flavor profile. Extremely limited quantities of each cut and curing method are produced each year.
