Dinner Salad

We love a big bowl of veggies, and cured meat makes it a meal! Here's our master formula for a great dinner salad:

Fresh greens: torn lettuce, thinly sliced napa cabbage, massaged kale, spring greens etc

Fresh herbs: Italian parsley, dill, fennel fronds, watercress, tarragon, basil etc

Cured meats: prosciutto (uncooked or crisped), crispy pancetta or guanciale, diced salami.

Vegetables &/or fruit: carrot ribbons, snap peas, thinly-sliced fennel, lightly-steamed asparagus, roasted sweet potato, crisp apple-- whatever you have kicking around.

Tasty extras: crumbled or shaved cheese, toasted nuts & seeds (our favorites are pepitas, sunflower seeds & walnuts), homemade croutons, crumbled corn or pita chips.

Your favorite dressing: we love a simple dressing of fresh lemon juice, olive oil and salt. But a zesty caesar or classic vinaigrette is great too.
