Humanely-Raised Protein Snacks from Award-Winning Cured Meats Makers La Quercia

For Immediate Release - Norwalk, IA – A new line of salami sticks is soon coming to market: Rustix by La Quercia will offer protein-filled snack sticks made from humanely-raised pork, hand-crafted in Iowa by celebrated artisans of American charcuterie. The lightly-cured salami sticks will be available in two varieties: Spicy and Smoky.

Rustix were born out of the desire to create a delicious snack stick from antibiotic-free pork that’s been humanely raised on American family farms. The new snack sticks are an embodiment of La Quercia’s commitment to quality food, sustainability and developing their own circular economy. The sticks are made with meat from the pork shank – a lean cut that does not work well for prosciutto.

Rustix are packed with 12 grams of protein per serving and are a perfect on-the-go snack while enjoying the great outdoors, traveling, or just reaching for an easy and healthful snack at the end of a long work day. Over the past decade, La Quercia has become synonymous with delicious and high quality cured meats, with an extensive line of charcuterie found in select supermarkets and specialty stores as well on restaurant menus from coast to coast.

“Sebastian Beumer, our Production Lead made some of these for fun. I saw them in the plant and pressed him to perfect them---and he did. We are excited to offer a new snack made with very high quality ingredients that offers protein-hungry people something delicious from a formerly undervalued cut of meat,” shared La Quercia founder Herb Eckhouse. “Good quality meat with simple ingredients and light curing have made for a snack we reach for again and again.”
